Jumbo Shells with Spinach Cheese Filling




1 pkg. (12) jumbo shells- cooked
2 pkg. (12) frozen chopped spinach- cooked and well drained
2 eggs- beaten
½ t. salt
¼ t. black pepper
8 oz. grated cheese (I used Monterey Jack)
12 oz. (1 ½ C.) Cottage cheese
24 oz. jar of spaghetti sauce

In a medium sized mixing  bowl, mix together spinach, eggs, salt, pepper, 1 C. of grated cheese, and cottage cheese.
Grease a 12X9 casserole and spread ½ C. of spaghetti sauce in the bottom.
Prepped ingredients.

Fill the shells with 1 T. of spinach filling and place in the casserole dish.
Stuffed shells.

Pour remaining spaghetti sauce over the stuffed shells and sprinkle the additional cheese over the top.
Cover with aluminum foil. Bake on 375 for 35-45 minutes. (or until bubbling and the cheese is completely melted)
(Takes 30-45 minutes to prepare.) This is a great meatless meal!
