Jumbo Shells with Spinach Cheese Filling |
1 pkg. (12) jumbo shells- cooked
2 pkg. (12) frozen chopped spinach- cooked and well drained
2 eggs- beaten
½ t. salt
¼ t. black pepper
8 oz. grated cheese (I used Monterey Jack)
12 oz. (1 ½ C.) Cottage cheese
24 oz. jar of spaghetti sauce
In a medium sized mixing
bowl, mix together spinach, eggs, salt, pepper, 1 C. of grated cheese,
and cottage cheese.
Grease a 12X9 casserole and spread ½ C. of spaghetti sauce
in the bottom.
Prepped ingredients. |
Fill the shells with 1 T. of spinach filling and place in
the casserole dish.
Stuffed shells. |
Pour remaining spaghetti sauce over the stuffed shells and
sprinkle the additional cheese over the top.
Cover with aluminum foil. Bake on
375 for 35-45 minutes. (or until bubbling and the cheese is completely melted)
(Takes 30-45 minutes to prepare.) This is a great meatless
meal!
